Hailing from the Brittany region, crêpes have become one of the iconic foods of France. Whether for breakfast, dinner or dessert, crêpes are a versatile dish that can be transformed by numerous fillings and are always a family favorite. In this hands-on class, we’ll teach the traditional techniques for making perfect, paper-thin crêpes from scratch. We will walk you through the steps for properly scaling and mixing two types of batter: the classic sweet pâte à crêpes sucrées and the savory galettes de sarrasin, a batter made from buckwheat flour, that is naturally gluten-free.

We'll then cover a variety of techniques for creating sweet and savory fillings, from classic lemon syrup, fruit coulis and chocolate to making a traditional Mornay sauce, herbed mushrooms, spinach and the classic fried egg-topped crêpe. We’ll discuss proper methods for flipping, folding and serving crêpes and what dishes and beverages are typically served alongside them to make a typical French meal. Finally, you'll love sampling all the delicious results!

Join us as we travel back to 12th century Brittany to uncover the origins of crêpes making and the unique geography, farming traditions and culture that created this staple food. The class will include a presentation on the history of crêpe making, their folklore, regional varieties and contemporary customs around crêpe making and eating. We will also discuss recommended equipment, including skillets, griddles and spreaders, ladles and spatulas.

- If we need to postpone or cancel a class either a full refund will be given, or you can use your payment as a credit towards any future class.

- If you need to cancel last minute - two weeks or less of the class date -  a full refund will be offered if we can refill your booking. Otherwise a 50% refund will be issued.
