Join us in the bakery for a culinary trip Europe: We go to Germany and Scandinavia, where the renaissance of rye is in full swing and sprouted breads have never been out of fashion. 

In this class we will re-discover baking with wild yeasts like sourdough cultures, and also focus on using the whole grain, a bread tradition from northern Europe. From sprouting to milling, mixing and shaping the loaves by hand, we work with century-old techniques to create flavorful loaves of bread that are both nourishing and delicious. Mix and shape your own bread and take it home for baking - you will have a fresh rustic sourdough loaf the next day.

In this class you will also learn all about the culinary history of German and Scandinavian bread, general mixing, baking and shaping techniques, and leave with a new understanding of bread baking, especially with rye flour. In addition to plenty of hands-on time, there will be short lecures about sourdough alchemy, differences in baking with wheat vs. rye, the benefits of sprouted breads and much more. Plenty of time is set aside for Q&A and discussions, and of course: Bread tasting! We will finish the class with a bread tasting and food paring.

Every participant will receive a hand-out with receipes and a sourdough culture to take home and start the baking adventure in his or her own kitchen.

- Full Payment is due upon registering for a class. We understand that there will be circumstances whereby you will need to cancel your course or change the date. Given two weeks or more notice we are happy to offer a full refund.

- If we need to postpone or cancel a class either a full refund will be given, or you can use your payment as a credit towards any future class.

- If you need to cancel last minute - two weeks or less of the class date -  a full refund will be offered if we can refill your booking. Otherwise a 50% refund will be issued.
