Our specialty breads change throughout the seasons and are inspired by or travels around the world.
The Bierbrot (beer bread) is made with freshly milled rye, stone ground whole wheat and sprouted barley. The secret about that sweet, hoppy flavor? Its fermented with fresh lager from Zero Gravity brewery in Burlington and has some spent grains for extra fiber and nutrition.
Khorasan Wheat (aka Kamut) is considered an ancient grain and the breads made with this flour have a distinct sweet and nutty flavor.
Specialty breads are not available year-round so email us if you are interested in a special variety.
We also do seasonal breads and pop-up bakes with grains like Waldstaudenroggen (an heirloom rye), Sonora Wheat and Rotkornweizen (red kernel wheat). Stay in touch via social media or our newsletter to know when we make those.
