Humans have been fascinated by cooking with fire for as long as we learned how to master it. Beautifully baked loaves of sourdough bread, flatbreads, roasted vegetables, slow-cooked beans, pies and so much more - a wood-fired oven is really all you need for your baking and cooking adventures. 

In this class we will explore the many types of wood-fired ovens, discuss wood as fuel, necessary tools, and how the ovens work.

Then we move on to the topic of bread making: we'll learn about starting and maintaining a sourdough culture, mixing dough by hand, explore some traditional bread recipes and finally bake some bread in our wood-fired oven. We will also discuss using the full heat cycle of a wood-fired oven, different recipes and techniques for using the oven's extreme heat in the beginning (pizza & flatbread) and the various stages as it slowly cools down to temperatures for roasting vegetables, rustic sourdough country bread, pastries & cakes, and overnight bakes. In the final part of the class we sit down  for Q&A and tasting. 

You don't need to have a bread oven at home to enjoy this class - many participants come to learn about the possibilties of working with a wood-fired oven or just to gain a better understanding of the process of natural bread baking and cooking with fire. All you need for this class is a love for wood-fired flavors and hands-on baking.

- Full Payment is due upon registering for a class. We understand that there will be circumstances whereby you will need to cancel your course or change the date. Given two weeks or more notice we are happy to offer a full refund.

- If we need to postpone or cancel a class either a full refund will be given, or you can use your payment as a credit towards any future class.

- If you need to cancel last minute - two weeks or less of the class date -  a full refund will be offered if we can refill your booking. Otherwise a 50% refund will be issued.
