Our Pumpernickel is made using the authentic method for German Rye Pumpernickel - no shortcuts. Baked at extremely low temperatures for 14-16 hours in the wood fired oven these breads have a distinct flavor and texture only found in Pumpernickel.
The Bierbrot (beer bread) is made with freshly milled rye, stone ground whole wheat and sprouted barley. The secret about that sweet, hoppy flavor? Its fermented with fresh lager from Zero Gravity brewery in Burlington and has some spent grains for extra fiber and nutrition.
Khorasan Wheat is considered an ancient grain and the breads made with this flour have a distinct sweet and nutty flavor.
