Where: Brot Bakehouse School and Kitchen, Fairfax, Vermont
Travel from Paris to the Alps and down to the Côte d'Azur with us, exploring origins and techniques of French foods while using the bounty of Vermont harvest time.
Together we will create a 5 course meal like you would find it in the French country today: Rustic, artful, subtle and full of flavor. While in the kitchen we explore basic techniques like knife skills, making sauces and hand-shaping breads. But we also look at the history of French culinary traditions, regional specialties, and using culinary herbs and vegetables the way it made French cuisine world-famous; while using local, organic ingredients whenever possible.
Of course the iconic bread of France - the Baguette - will be explored as well and we learn the proper techniques of mixing, shaping and baking it.
Everything you learn in class can be made at home, so you will be able to create an entire French menu - from appetizer to main course, from fresh bread to dessert - with newly learned knowledge and skills. Most of the ingredients will come from the gardens and greenhouses of Brot Bakehouse School and Kitchen or neighboring farms and producers.
Our partners include Hudak Farm, Butterworks Farm, Thornhill Farm and other Vermont producers, like Brio Coffee Works and Red Wagon Plants.
After cooking together we will prepare the garden table for the meal and we will enjoy a true feast - guaranteed you feel like you've just spent a day in France.

- Full Payment is due upon registering for a class. We understand that there will be circumstances whereby you will need to cancel your course or change the date. Given two weeks or more notice we are happy to offer a full refund.
- If we need to postpone or cancel a class either a full refund will be given, or you can use your payment as a credit towards any future class.
- If you need to cancel last minute - one week or less of the class date - a full refund will be offered if we can refill your booking. Otherwise no refund can be offered.
