This online class (via Zoom platform) is an introduction to baking with lesser-known and often under-appreciated alternative grains, like buckwheat, millet, sorghum, corn, teff and oats - both in sweet (pastry) and savory (bread) applications.

Baking with these gluten-free grains can be challenging: It calls for different methods, techniques and handling of the dough. In this class we explore a variety of flavorful, rustic breads and some pastries.

You will also learn century-old methods of using a bread starter culture (sourdough) in these recipes and what you can do to make sourdough breads and alternative grains more successful.

Ingredients for gluten-free baking are discussed and recipes are shared beforehand so you can stock up your pantry and start a bread culture in time for the class (optional).
