Whole grain breads don't need to be like dry bricks. In fact, they are full of flavors, have a wonderful, rich texture and pair with a range of foods and beverages. Alternative grains are grains that do not contain gluten, so they were traditionally made as flatbreads or porridge breads. We will explore the possibilities (and limitations) of these grains when it comes to modern baking, but also include sourdough into the process to add flavor and digestibility.
This is an all level class but we will dive deep into the world of baking with whole grains, ancient grains and alternative (gluten-free) grains, adding nuts and pulses for texture and flavor. General baking experience will make sure you enjoy the class. Some experience with sourdough baking is helpful.
NOTE: We are working with gluten-free grains as well as whole, locally grown grains like rye, spelt and einkorn, which contain gluten. Unfortunately we cannot accommodate participants with celiac disease or a gluten intolerance due to cross contamination in the classroom. We are using the same space and the equipment in our regular workshops, so although they may not being used in class, wheat, sesame, nuts, soy, dairy and other allergens are present.
