(Some knowledge about baking with sourdough is helpful for this class)
Come "virtually" to the wintry bakehouse in Vermont this holiday season and join us from the warmth of your home for a special class devoted to the most iconic and impressive holiday specialties of Europe: The Stollen and the Panettone.
We will talk about their roots, history and serving traditions and share important tips and techniques on how to make them authentic and successful.
Both holiday breads will be made in their most original form and we'll talk about special considerations when baking with yeast vs. a sourdough culture ('madre'), preparation & maintaining a sourdough culture for pastry making, feeding schedules, temperatures, non-negotiables, rules for success and much more.
While much of the class will be demo style you will have the opportunity to bake along with a classic Stollen recipe if you prepare accordingly (you will receive our recipes in time to prepare for class), and we end the class with an extended Q&A where you can ask all your questions. This class is open for everybody, but will be particularly interesting for bakers who are looking to advance their baking skills and those who love European holiday breads in their most traditional form.
The class is online via zoom and all recipes will be available before the class. The class will be recorded and made available online 24 hours after streaming.
Join us online for a celebration of the rich history and traditions of the holiday season with these iconic holiday breads, also called the King and the Queen of holiday breads.
