Level: Intermediate to Advanced / experience in sourdough baking or fermentation will make this class accessible (and enjoyable).

Join us for an in-depth exploration of sourdough, wild yeasts and bread fermentation. This class builds on the "Bread Baking 101" classes and will take you further in you baking adventures with a starter culture. The class is both theoretical and hands-on; different methods of working with a starter culture, as well as different types of breads and grains - and their differences in baking qualities- are discussed (e.g.. wheat, whole wheat, rye and other grains), and different fermentation methods explored.
In order to make great bread you have to understand the alchemy of a starter culture and how to coax it into the best performance. We discuss the role of temperature and feeding routine and try our newly gained understanding when making a sourdough bread from scratch. If you are already baking sourdough bread and are ready for the next level this class is for you!

- Full Payment is due upon registering for a class. We understand that there will be circumstances whereby you will need to cancel your course or change the date. Given two weeks or more notice we are happy to offer a full refund.
- If we need to postpone or cancel a class either a full refund will be given, or you can use your payment as a credit towards any future class.
- If you need to cancel last minute - two weeks or less of the class date - a full refund will be offered if we can refill your booking. Otherwise a 50% refund will be issued.
- if you need to cancel within 24 hours of class a full refund will be offered if we can refill your booking. Otherwise no refund can be issued.
