Get a taste of real Pumpernickel, the way it's been made in the Westphalian region of Germany for hundreds of years.
Artisan Westphalian Pumpernickel bread has been awarded the PGI seal (protection of geographical indications) by the European Commission. This certification is given to regional products that have been made in specific regions, with certain ingredients and traditional methods - often by highly skilled artisans.
Pumpernickel is an example of people bringing their food traditions to other parts of the world, where they often change their ingredients and the way they are made according to what's available and individual interpretations.
Here at Brotbakery we bake Pumpernickel according to the guidelines of Westphalia, with 100% rye flour (grown in Vermont), our own rye sourdough culture and pure salt. We bake the dough in special baking chambers for 20 hours at very low temperature to ensure the sweetness of the rye shines without any additives and the color is that dark chocolate brown you like to see without added colors.
