Our Pick Up Address: Brotbakery, 38 Meade Rd. in Fairfax, Vermont - please use the parking spaces opposite the stone house facing the woods and come up to the bakehouse via the walkway along the barn. Walk up the stairs to the porch where you see the entrance to the bakery. Come on in!

Description
Honigkuchen, or honey cakes, are not your ordinary cookies. They are a variety of the popular Lebkuchen, but made using more honey, spices and fermented rye flour. They keep for months, due to the low moisture and fat content. In fact, in the old days it was considered medicinal because of the honey and warming spices were said to build strength and immunity.
Our honey cakes are an original recipe from northern Germany, where my roots are. The dough is fermented for 1-3 months with locally grown rye, local, untreated honey and our very own spice mix. Only very few traditional Lebküchner (Lebkuchen bakers) exist anymore and we are happy to be able to share this ancient tradition with you.
Truly unique, these soft, spiced cookies will improve in flavor with age.
The Elisenlebkuchen is the richer cousin of the Honigkuchen. Made with candied fruits, organic nuts and chocolate, it is moist and soft, a rich cookie full of complex flavors and spices. We dip our Lebkuchen in premium Valrhona chocolate.
Storage tip: If you like the cookies to stay soft, store them in a tin box, with a slice of apple in it.

Elisenlebkuchen contain nuts (hazelnuts*, pecans*, walnuts* and almonds*), marzipan paste, and almond butter. May contain and other nuts and dried fruits, cocoa (80%) and chocolate 72%-85% (fair trade).
