Persian Love Cake and Chocolate Prosecco Truffles

Make something different for Valentine's: The Persian Love Cake is an iconic cake with a fragrant rose and cardamom scent, which brings you right to the gardens and markets of the orient.
Made with a blend of almond and semolina flours, and flavored with cardamom, citrus and rose petals, this cake is moist and fragrant and can be decorated in many ways. We will learn how to seal the cake with a rose water syrup and decorate it with rose petals and pistachio and a zesty icing. 
We will learn about the spices, scented waters, and other ingredients common to Persian cuisine, and how to source and prepare these ingredients for maximum flavor. Anna will also demo how to make a cultured cream often served with the cake.
As the cake bakes, we will learn a recipe for pecan prosecco truffles that is simple and so delicious, you will never want to buy truffles again! Treat your Valentine ~ or yourself ~ to these decadent recipes and put a new spin on winter baking!

About the instructor:  
Anna Mays is the head culinary teacher at Brot Bakehouse School and Kitchen. An anthropologist by training, she enjoys teaching about world culinary traditions, agricultural practices and the intersection between food, diet, culture and well-being. Anna trained at Le Cordon Bleu Culinary School in London and enjoys baking and cooking for seasonal festivals and holidays. Having lived in Paris and Lyon she loves to teach about Crêpes and Galettes the way she tasted them in the streets and Cafés of France.
